Ever since the nearly famous New York Times “No-knead” article made its way through the breadosphere, I’ve been fairly obsessed with it. As it looks now, Breadtopia.com might as well be "No-knead.com". I have just posted three of my favorite recipes with accompanying videos. These variations of the basic no-knead method are Cranberry Pecan, Seeded Sour and Parmesan Olive.
While I think one could easily live a long and contented bread baking life with just the no-knead method, for the sake of variety and exploring a range of interesting options, you might be relieved to know that I will be moving in other directions as well.
Over 100 people cast their vote on the home page survey indicating a strong interest in sourdough baking and baking with whole grains so I will certainly be following that lead.
I sure appreciate hearing from people, so don’t hesitate to drop me a line any time. If you have any suggestions for site improvement, I’m all ears. If you would like to share a favorite bread recipe with others, send it over. I’ve started a section here for just such contributions.

I think your site is a goldmine for those of us who live to eat bread. I think I saw a recipe for oatmeal no-knead bread on your website, but can’t find it again. Could you direct me?I want to "build in" as much nutrition as possible in my breads without unnecessary calories.

In the next few days, I’ll be posting a video/recipe for a no knead bread that includes steel cut oats. That will be under “No Knead Recipe Variations”. I’ll sent out a notification to newsletter subscribers. At the same time I’ll add a video for making a more traditional sourdough bread that uses mostly whole grains.
