This book is fabulous! Love it..new to bread making and have made several of the sour doughs with great success...my book was missing the startere..but I used Emmanuel directions and made my own..with yummy results..I now bake bread every Saturday..and always at least one sourdough from this book!
Thanks Emmanuel for such a beautiful creation!

|I love this book. Nothing else can I say.... I h Ave successfully made many of the sourdough loaves..using Emmanuels starter recipe...have bought many products from breadtopia ...like nproof baskets... have only self taught to make bread. In last 6 months or so....but this book inspired me to make my first loaf of sourdough. Thank you Emmanuel!!!! Your book is amazing..that is all I can say!..sincerely, Tina Manley...I now have an internal luv for and knead to make bread weekly!|

I have been learning to bake bread for a few months and have accumulated several instructional / recipe books.
Emmanuel's is the best. The instructions are clear, the photography is outstanding and the breads themselves are delicious.
Great variety of interesting recipes. I have made the polenta bread, chocolate currant, hazelnut currant, levain de campagne and pecan with raisins. All get rave reviews from friends and family.
Even better, Emmanuel is a wonderful and helpful person. I had some difficulty with a recipe and thought to track down his email address and ask for some help. Not only was he responsive but he went out of his way to take the time to call me at home and personally coach me (twice - I am needy). How terrific is that!?
Read the introductory text carefully. For example, the recipes assume you are using a convection oven. If you are not, the simple adjustment is there.
Emmanuel has shared with me an errata. The water in the levain de campagne is 300g, not 150g.
Water absorption is a little different in US flours. I needed to cut back on the water in the sourdough polenta. The first one I made was too wet and I had a baking / sticking problem. It was still great. After Emmanuel helped me adjust, it was even more great!
Final note: Buy this book. :)

I stumbled on to this gem recently. Though my
shelf is groaning from the weight of bread books, this is a must purchase for bread enthusiasts. Truly stunning photography, simple, well written text and unique recipes like "beetroot sourdough".

|I have made several recipes following the instructions in this book for sourdough breads. They all turned out beautifully. The Chocolate and Currant Sourdough Bread was voted the best so far per 1 lucky friend who received some for CHristmas.|

This is just a wonderful book. It contains a great selection of recipes, from different countries and traditions, and the photography is beautiful!
I know that there are literally hundreds of other bread books out there to choose from, and I haven't read them all, so I can't just tell you to buy this one. However, I can tell you that you'll like this book if you:
- like clear directions and step-by-step 'how tos', many of them in lovely photos so you can see exactly what you're supposed to be doing
- want extra information above and beyond the recipes (such as breakdowns on different types of flour, baking equipment, etc, and sometimes little stories about where the recipes come from)
- want both some basic staple bread recipes and some more exotic ones
- like having a variety of measurements (grams, ml, cups etc)
- want some extra tips from a master baker who clearly knows what he's doing (and in fact has won prizes for doing so).
I think you'll love this book. I do :)
