When you're checking to see if your bread is done,  waiting 20-30 seconds for your "instant" read thermometer to reach a true reading seems like an eternity. To minimize heat loss from oven and food, you want an accurate reading quickly.

Our research turned up two companies that make quality instant read thermometers which actually live up to their name. The Thermapen probe thermometer by ThermoWorks.com is popular and sells for about $80-$90. Thermapen advertises a 4 second time to get a good read.

The other is our Maverick ET-32 which is about as fast and sells for $15. It's a great deal for a great thermometer.
