Khorasan Wheat Sourdough Bread
Khorasan wheat is an ancient grain with golden berries that are about twice the size of modern wheat berries. It’s also grown under the trade name Kamut®. Khorasan has a smooth, buttery flavor and none of the bitterness some people perceive in modern red wheat, and like its distant relative durum, khorasan is high in protein but has moderate gluten strength. In working with khorasan for the first time, I found it was easy to handle and it produced a lovely looking and awesome tasting bread. This recipe uses stone ground high extraction khorasan flour, which means the flour has been sifted so that it is somewhere between white and whole wheat flour. This flour retains some of the bran and germ of the wheat berry, so it has more nutrients and color than white flour.
Good oven spring and a nice airy interior
To make this bread, you can buy high extraction khorasan flour, which has been stone milled and already sifted, or you can buy khorasan wheat berries to mill yourself, and a #40 or #50 sifter to target about 85% extraction. This means that you sift out 15% of the weight of the flour that you mill from the khorasan berries. You absolutely also can make this bread with whole grain khorasan flour. Simply use 15-20 grams more water in the dough.

Khorasan Wheat Sourdough Bread
Khorasan wheat has a smooth and rich, buttery flavor, and the high extraction flour used in this bread is midway between whole wheat and white flour. This dough is wonderfully manageable, and the final bread has a beautiful golden color, soft texture, and delicious flavor.
