  This is definitely a quality, well-made product but I am a bit disappointed that the blade-edge is not tapered or beveled as the description says. The edge is blunted / squared. I'm not sure if this is typical of all bench knives, but it's not what I expected. This makes the scraping and cutting less precise, and makes it more difficult to slide the blade cleanly under the dough when working with it or when lifting/moving it. If I find another knife I like better, I might get it.

  I doubt if this performs any better than a less expensive version of the same thing, but the weight and quality shine and it just feels great in my hand. Brass rivets are a nice touch. I love quality tools. This will long outlive me.
