The Classic's construction of solid native beechwood with fingerjointed corners reflects the warm and simple goodness of whole grain foods. Precisely fitted corundum/ceramic burrs grind to any texture you choose, from exceedingly fine flour to coarse meal (even merely cracked if you wish). Power & capacity: All Wolfgang mills are equipped with specially developed electric motors that provide reliable and efficient, yet extremely quiet power. The Classic, with its 360 watt motor, produces 3.5 ounces of flour per minute at the finest setting. Its large solid beech hopper holds 2 lb., 3.3 oz. of grain, and as with all KoMo mills, the Classic can run continuously so you can refill and keep grinding for whatever quantity of flour you need. All dry grains can be ground, including wheat (both hard and soft), oat groats (dehulled oats), rice, triticale, kamut, spelt, buckwheat, barley, rye, millet, teff, quinoa, amaranth, sorghum and dent (field) corn. It will also grind spices, lentils and dry beans (pinto, red, garbanzo, kidney, etc.) It isn't suitable for herbs, oilseeds like flax or sesame, popcorn, or fibrous materials.
Easy to live with: As with all Wolfgang mills, cleanup of the Classic is minimal and easy, and full access to the milling stones takes just ten seconds, without tools. A sealed wooden lid keeps everything clean between uses.

Wolfgang freshly milled grains are far more nourishing and flavorful than flours which are weeks or even days old. Freshly milled flour from the Wolfgang exits the shoot at a temperature only sightly warm to the touch.
Whole grains begin to oxidize and spoil as soon as they're milled, causing a loss in nutritional value and flavor. At a minimum, it's important to check the shelf date on store bought whole grains and refrigerate or freeze what you keep on hand.
Ideally, purchase whole grains in bulk and mill at home as needed. Whole grains keep indefinitely and hold their nutritional value. Milling your own grains with a Wolfgang grain mill takes less than a minute and cleanup about the same.
