Red Star Organic Instant Dry Yeast is a leavening agent composed of living yeast cells derived from a pure culture of Saccharomyces cerevisiae, grown under carefully controlled conditions to ensure optimum consistency, stability, and activity in baking processes.

Red Star Organic yeast can be added directly to your dry ingredients without it having to be activated in water first. Use it as you would commonly available instant dried yeast but allow more time for the proofing process to complete.
In a controlled comparison test with conventional SAF instant yeast and Bioreal instant yeast, Red Star Organic fell squarely between them for speed of proofing.
We made 3 loaves of bread, identical in every way except for the type of yeast used. Each loaf used:
After 4 hours, the SAF yeasted dough first rise was finished.
After 5-3/4 hours the Red Star Organic yeasted dough first rise was finished.
After 7-1/4 hours the Bioreal yeasted dough first rise was finished.
All 3 loaves turned out almost identically.
Like any baker’s yeast, Red Star® Organic Yeast is a living organism and must be handled properly to ensure optimum performance. Never expose yeast to high temperatures during storage or use. Store this product at a comfortable room temperature or in the refrigerator or freezer. Refrigeration is not required for unopened packages.
